Okay so this recipe is called Apple Pie Cupcakes..but i have to say, i think they are much more like muffins!! But super super super super GOOD!!! i love these!!
i found this recipe online, tweeked it to my liking.
hope you enjoy it as much as my little family has!
To begin:
Preheat you oven to 375 degrees.
have your nonstick cooking spray in reach along with your muffin pan
(you don't want to grease too soon because the grease will settle and leave and unpleasant after taste when baking)
Two large mixing bowls.
Whisk.
Hand mixer, with beaters attached.
What you will need:
1 medium size lemon (juiced)
1 -1/2cups *self rising flour*
3/4 cup granulated white sugar
1 heaping teaspoon of baking powder
1 heaping teaspoon cinnamon
1/3 cup unsalted butter, melted
1 large egg slightly beaten
1/2cup whole milk
1cup super finely chopped granny smith apples (like two good sized apples)
How to prepare:
in one large bowl, whisk the dry ingredients.
including flour, baking powder, cinnamon.
in a seperate bowl beat together sugar and butter until fluffy, add the egg and beat well
then add in the milk and lemon juice.
mix well,
then stir in apples.
pour wet ingredients into your dry ingredients and mix just until moistened!
DO NOT OVER MIX!!
lightly grease your muffin pan (makes twelve muffins)
pour into muffin cups evenly.
bake for 18-23minutes
remember always start at the lower number and check.. you can always keep adding minutes but you can't go back once its over cooked.
once toothpick inserted in the center comes out clean, allow to cool in the pan for 5 minutes,
then remove from the pan and move to a cooling rack and ENJOY!
this is yummy warm.
Your welcome to also try my whipp cream frosting ontop..
its super yummy as is, or with a simple lemon drizzle ..but this frosting is absolutely amazing ontop.
you will need either a stand mixer or alottt of patience.
whip together 1 cup of heavy whipping cream until soft peaks form..
then whip in 1/4 cup plus 1/8 cup of orange juice along with 1/2 teaspoon lemon juice
1 teaspoon of orange zest, and 2 tablespoons of powder sugar
whip until desired consistency.. frost cupcakes and ENJOY!

The BEST Banana Muffins You Will Ever Have!!!
This is my Banana Crumble Muffin recipe that I found online and put my own twist on it!
These are seriously so yummy you won't be able to stop eating them! Luckily, you can eat them and not feel too guilty..their relatively healthy!! They could be even more healthy if you wanted to substitute half wheat flour!.. I personally like a treat every now and then anyways :)!
To begin:
Preheat you oven to 375 degrees
Have your muffin pan out and prepared for greasing, having your nonstick cooking spray in reach!
(or muffin tins.. i didnt use muffin tins because I thought the muffins looked so beautiful without ..the deep rich browns with speckles of yummy cinnamon)
Have two large bowls at easy access for wet & dry ingredients.
Have your food processor out with regular blade attached just for pulsing together the crumble topping.
Hand Mixer with beaters attached.
Good wooden spoon.
What you will need:
for the muffin :
1-1/2 Cups all-purpose flour
1 heaping teaspoon baking soda
1 heaping teaspoon baking powder
1/2 teaspoon salt
3 large very ripe bananas, mashed
3/4 cup white sugar
1 large egg, lightly beaten
1/3 cup unsalted butter, melted
1 heaping teaspoon of cinnamon ( or just measure a teaspoon and sprinkle in a good dash extra)
for the crumble:
1/3 cup light brown sugar packed
2 leveled tablespoons of all-purpose flour
a good dash of cinnamon ( 1/2 a teaspoon i'd say)
1 tablespoon unsalted butter very cold (keep in refridgerator until ready to use)
How to prepare:
In a large bowl combined the dry ingredients and mix well with a whisk.
includes: flour,baking soda,baking powder,salt,and cinnamon
In a seperate bowl combined wet ingredients and mix well with a hand mixer until creamed and fluffy.
includes:ashed bananas (mash directly into the mixing bowl with wooden spoon following with,melted butter and sugar ..mixed until fluffy, mix in the egg that if lightly beaten prior to adding.
Then with a spoon mix in the wet ingredients to the dry, mixing gently and just until all wet and the dry and wet are combined..DO NOT OVER MIX!
In your food processor pulse brown sugar and cinnamon, then bring butter out of fridge and pulse just until it ressembles coarse corn meal! DO NOT OVER PULSE! you want little specks of butter throughout!
Grease your muffin pan with nonstick cooking spray.. (makes 10 muffins)
spoon in your muffin mixture into 10 muffin cups evenly then use a seperate spoon and spoon crumble mixture from food processor over the top!
bake for 15-20 minutes.. every oven is different! always start at 15 minutes and check with a toothpick inserted in center. . when it comes out clean its ready: wait 2-4 minutes than remove from muffin pan so the do not over cook.. place on a plate or onto a cooling rack
for extra yumminess (totally optional but i think would be AMAZING)
take 1 good large lemon, juice it..
add in some powdered sugar til pale in color and taste to your desire.. and it easy to drizzle..
drizzle over top..

A Family recipe that Mamoo often makes that i put my twist to
My grandmother, aka, Mamoo has this recipe she calls mexican cornbread!
she makes it very similar to this only i changed it a bit and somehow its taste resembled an omlet or a brunch type meal! YOU WILL LOVE IT!!!
My mexi-style casserole bake:
to begin:
Preheat your oven to 400 degrees [or whatever your corn muffin mix]
Grease your 8X8inch baking dish
what you will need:
1 corn muffin mix box [prefer jiffy]
1 egg
3/4 can of cream style corn
1 large can diced mild green chilies
1/2 large yellow onion coarsely chopped
1/3 cup +2 tablespoons extra of milk
1/2 large red bell pepper coarsely chopped
1 and 1/4 cup of sharp or medium cheddar sprinkled on top (or mexican blend!)
stir until combined well but still slightly lumpy
do not over mix. allow batter to rest for 5 minutes before baking to help it during the baking process.
pour into your greased 8 inch baking dish and make sure its all evenly distributed
then sprinkle with cheese and bake for 20-25 minutes, or until the top is golden brown and crispy and a toothpick is inserted in the center and comes out clean
the casserole will be very creamy:)

serves well with mexican rice and chips with salsa.
or even as a brunch item with bacon crumbled inside!

what you will need:
1 large red bell pepper;coarsely chopped
1 large yellow onion;coarsely chopped
1 teaspoon of dijon mustard
1 large green bell pepper;coarsely chopped
dash of salt and pepper
4tablespoons margarine or unsalted butter
1 packet of Sazo'n Goya unique seasoning blend (con azafran)
2cups long grain white rice (does not taste the same with brown rice
1cup frozen peas
1cup frozen corn
3 cloves of garlic(or 2 large cloves) minced
dash of hot sauce
1 teaspoon granulated sugar
how to prepare:
In a medium pan pour 4 cups of water and dash of salt , bring to a boil.
stir in rice and Sazo'n seasoning and cook covered simmering for around 25 minutes, or until your water is absorbed and rice is tender!
add in the onion and peppers to the melted 1 tblspoon butter or margarine.
cook until almost completely translucent
stir in the garlic and dijon mustard ( strange i know but trust me it adds the right amount of tang)
cook until the onions have completely cooked through with very little bite left.
add it one more tablespoon of butter with the peas and corn
cook only for a few minutes, we want the veggies to remain slightly crunchy so only cook the corn and peas til softened. Stir in the sugar.
spoon in the mixture to the rice and fluff!! yummy
allow individuals to add hot sauce!

heres my solution recipe for you ! :) its call banana fake out soft serve ice cream!
i found this recipe online and wanted to share this with you :)
To begin:
Have your food processor out and ready!
(regular blade for this)
What you will need:
3 large bananas cut up into small chunks, frozen for atleast 3 hours
1/4 - 1/2 Cup or whole or 2% milk
2 teaspoons of light brown suagar
How to prepare:
Put the frozen bananas into the food processor pulse just to break up the banans slightly
then pour in 1/4 cup milk and allow to start to break up and combine then add in remainder of milk and pulse for a few minutes until the banana chunks and broken up and the mixture appears as soft serve ice cream:)
then pulse lightly in the brown sugar and serve!!
serves 4 people.. :)

Searching for a homemade biscuit that is easy breezy?
Heres is an amazing biscuit recipe my grandmother gave to me.
It is so easy and so satisfying, as well as super inexpensive to make.
You will never want to buy another frozen package of biscuits AGAIN!
to begin:
preheat your oven to 400 degrees.
what you will need:
2c. self rising flour
1 tblspn. granulated sugar
1 heaping teaspoonful of baking powder
1/2c. unsalted butter, or shortening
3/4c butter milk (or whole milk is fine)
1/4 teaspoon salt (unmeasured, a little less)
how to prepare:
This recipe you can do two ways, kitchenaid *or hand mixer* or my favorite, which saves me time -Food processor.
yes, i said food processor.
In your food processor with just the regular blade add in the flour,baking powder, and salt.
pulse until all mixed well.
then add in the sugar,pulse lightly.
get your butter from the fridge(always want butter cold for this recipe), cut into small cubes.
then add to food processor and pulse only a few times until the butter is the size of peas.
then add the buttermilk and pulse until the dough seperates from the sides of the food processor.
lay the dough out onto a lightly floured surface,using your hands just fold over each side rotating until you have formed layers.
*remember do not kneed this dough. we are simply forming layers*
then using a rolling pin or your hands, roll or pat out until about 1/4 in thickness.
With a standard 3inch biscuit cutter, cut out your biscuits.
* remember to dip the cutter into flour to keep from making a mess and the dough sticking*
then on a lightly sprayed baking sheet, place your biscuits on.
baking time:12-17 depending on the size of the biscuits
check at 12minutes first.

mix until well incorporated and is light & fluffy, then add the eggs. beat well. adding the baking soda and salt, mix well.
then stir in the cinnamon ,oats,and craisins(or raisins)
baking:
on a lightly sprayed baking sheet,measure out teaspoonfuls of the mixture and line out 12.
time:
10-12 minutes.
check at ten to prevent over cooking, depending on the size of cookies.
makes 2-3 dozen yummy cookies
